Looking for ideas for an inspired healthy dinner tonight? Here's one that's in frequent rotation at our house. Pizza Puffys are a cross between a German pancake, an omelet and a pizza. They are simple to make, very filling and best of all, customizable!
Start with a simple batter made with flour, egg and milk. Put it in the oven and watch it puff up dramatically. Then, top it with whatever ingredients you have on hand. We love the Mexican version (beans, corn, salsa, avocado), which is perfect for a meatless meal. Just add a green salad and you're good to go! I wish I had a better photo to share, but you'll have to trust me, Pizza Puffys are fun to make and even better to eat!

Wow -- it's pizza flavored "dutch babies"! Which is one of our favorite breakfasts. I don't know why I never thought of this -- how cool!

I've never heard of Dutch babies Sara! But I have heard of German pancakes - often served for breakfast with cinnamon sugar or powdered sugar on top. They're yummy any way you do it!

Hi Fran - I've been meaning to try it with white whole wheat flour - I bet it would be pretty good. I think 100% whole wheat would be a bit too hearty. Do you have any suggestions for a healthier flour or flour blend?

Great recipe! I have to use recipes that are customizable since we have so many different likes and dislikes in our house. Do you think the recipe would work with rice milk or another milk alternative? Sometimes the rice milk makes batter too thin.

This recipe is delicious as a vegetable pizza. I used rice flower and soy milk and it turned out really good.

These are awesome!! I've had Dutch babies before but I'm more a savory type of gal. I made one this morning and put spinach and goat cheese on it. The kids were so excited about watching it puff up while cooking, that they actually tried it, and liked it!!
I'm planning to make one tomorrow with a little garlic and dry mustard in the "crust" and then use leftover Easter ham and Swiss cheese for topping...I cant wait.
