Tomatoes and cucumbers...the home gardener's staple crop. But what to do with all of them? At our house we make greek salads!
We don't use a recipe but here are the basics:
Cucumbers, peeled, cut in 1/2 and sliced
Tomatoes, diced into bite-sized pieces
Red pepper, diced into 1/2 inch chunks (optional)
Red onion, small dice (just a bit for flavor, I don't like too much)
Kalamata olives, whole or chopped (we were out which is why you don't see them in the pic)
Fresh basil, finely chopped
Feta cheese, crumbled into bits (I like to use a lot!)
Dressing made with olive oil, lemon juice, salt and pepper
(a true greek salad would include a dash of oregano in the dressing but I'm not a big fan)
All you need is a loaf of crusty bread and a glass of wine and you're good to go!
