My husband made me a birthday cake. And if that wasn't sweet enough, he made it with veggies from our CSA!! Can you guess which veggies he used?
He started with the carrot cake recipe from the Moosewood Cookbook but he pureed the batter so it was smooth and didn't add any raisins or other add-ins (we have a raisin aversion in the house). Then he pureed some cooked beets and added them to part of the batter. The cake was layered with regular batter on the bottom and beet batter on the top. Then he sprinked toasted pecans on top of the batter.
Sound weird and not very sweet? Well it was surprisingly sweet and incredibly moist. Seriously good and so healthy we all ate it for breakfast the next day!

We make a carrot zucchini cake, and a chocolate zucchini applesauce cake - it uses 2 C zucchini and 1 C applesauce in the making... and I think that makes a yummy dessert! The last couple of rounds I've made, we've made them into cupcakes and kiddos have devoured them too.

I made a chocolate beet cake once. It was very rich and moist, but had a bit too much earthiness from the beets. I think I did not boil them long enough. I would share the recipe, but don't think I still have it. Surely I found it by simply google though.

I made black bean brownies last week. They are not good warm from the oven, but they taste good after they cool. There are lots of recipes online.
