What's a PBOC cookie? Why Peanut Butter Oatmeal Chocolate Chip, of course! Also known as my family's favorite homemade cookie.
Why do I like them so much? They are made with 1/2 white whole wheat flour and 1/2 all-purpose flour, plus a bunch of whole grain oats. Add in some natural peanut butter (the kind with no added sugar) for protein and high-quality chocolate chips and you've got a satisfying cookie that is practically healthy!
Why do my boys like them so much? They taste incredibly delicious!
1 cup butter
1 cup white sugar
1 cup brown sugar
2/3 cup chunky peanut butter
2 tsp vanilla
2 eggs
1 cup white whole wheat flour (or whole wheat flour)
1 cup all-purpose flour
2 1/2 cups rolled oats (not quick oats)
1/4 tsp. salt
1 tsp baking soda
1 tsp baking powder
2 cup chocolate chips (or carob chips)
Mix dry ingredients together in a medium bowl and put aside. Beat butter and both sugars together until smooth. Mix in eggs, one at a time. Then add peanut butter and vanilla and mix well. Add dry ingredients in two batches, mixing well after each addition. Stir in chocolate chips. Drop dough by rounded spoonfuls onto un-greased cookie sheets. Bake at 375 degrees for 10 minutes.

This might be a silly question but, what is the difference between whole wheat flour and white whole wheat?

Hi Lee - good question! White whole wheat is a type of whole wheat flour that is a bit milder than regular whole wheat but has a higher fiber content than all-purpose flour.
